How syetm fetches data from table

Hello experts,

I want to know how system fetches data from the any table.

For example

Suppose I do select query on table ekko without any condition upto 10 rows it gives 10 PO's.

Same thing if I do for 5 rows it gives me diff result.

I want to on what basis system fetches the records.

Please help..
